Rise is the first hospitality space for social enterprise The Bread & Butter Project.

THE CURRENT SPACE

The frontage consists completely of bifold doors and glass panels with a step down to the sidewalk with space for small outdoor dining. The current entry door is on the side. The space orientates to the South East and receives lovely morning sun. The main dining space is completely open except for one immovable column. There is a back entrance which leads to a storeroom and a cool room. Toilets and entrance was reconfigured to adhere to accessibility standards.

CLIENT BRIEF

The Bread & Butter Project is Australia’s first social enterprise baker providing traineeships for refugees and asylum seekers. The founders, Paul Allam and David McGuiness, owners of Bourke Street Bakery are looking to open their first hospitality space.

CONCEPT

BREAD - THE ULTIMATE LEVELLER

Rise by The Bread & Butter Project takes the user on a journey. Beginning at the dawn of a new day, of hope and empowerment culminating in the simple pleasure of coming together, to connect over the breaking of bread and the sensual experience that follows. And at the centre of it all – bread.

Moodboard

Moving away from the typical industrial bakery-style used at Bourke Street Bakery, but keeping the same feeling of home, Rise includes more natural and tactile materials. The palette is neutral with smooth natural plaster walls and natural sandstone paved floors. Softness and a hint of the signature butter yellow is introduced with textured furnishings on the banquette upholstery, rug and sheer fabrics.

Textures and colours to represent bread and baking are seen through the terrazzo bench tops, veneer joinery, subway tiles, and timber embossed panels. The materials keep the space open and bright, more like somewhere you would have in your own home. It’s uncomplicated, ready to be filled with the stories and experiences the diner brings to the space.

The journey for the customer starts as they enter the space. Their senses are drawn the open bakery and kitchen giving an instant connection to the brand and the story of hope and empowerment. As they move into the dining area their journey continues where they can then connect over the breaking of bread either at a communal table, more intimate indoor or outdoor table or relax for a coffee and pastry in a lounge chair.​

A custom bar table is the focal point of the entrance. Keeping the space open it allows for customers to pick up bread for purchase, lean on while waiting for coffee and takeaway, and also keeps the space flexible allowing for possible future changes such as social distancing.

An important touch point for customers is around bread and the connection to the narrative. When customers walk in along the left is a half-height glass wall as a partition to the open bakery and kitchen. This allows customers to connect with the brand and the smell of bread fills the space with feelings of warmth and nostalgia. On the glass is graphics and stories able to be read while waiting in line which is an important journey touchpoint. Seeing the workers learning, baking, and cooking allows the customer to become a part of their journey.

The timber wraparound bar, constructed with an embossed timber and topped with a slab of terrazzo will be where customers order food and purchase bread from the custom brass shelving bakery wall. There will also be a sunken glass cabinet for the display of pastries and food. Custom acrylic signage will show customers where to order and pick up takeaway. Built-in cabinetry run along both sides of the bar providing storage for takeaway, drink and food prep and serving.

The name of the new hospitality venue is Rise by The Bread & Butter Project. The name Rise was chosen as it represents multiple meanings but overall embodies the ideals and vision of The Bread & Butter Project and for their new venture. Rise- like the rise of the dough and bread when baking. Rise like the sunrise when baking begins but also the dawn of a new day and rise and shine.

And finally Rise, the training and employment the refugee and asylum seeker bakers receive from The Bread & Butter Project help them to rise up and begin a new life for themselves in Australia. The logo is simple just like the Bread & Butter Projects logo with Black, White and the signature butter yellow and works well with the concept for the space.
